Danish Apple Pork
With Blue Cheese (Æbleflæsk)
Ingredients:
¼ cup crumbled Daneko Danish Blue Cheese
6–8 slices pork belly or thick-cut bacon
2 large apples (like Granny Smith or Honeycrisp), peeled and sliced
1 large yellow onion, thinly sliced
1 tbsp butter (optional, if pork isn’t very fatty)
1 tsp sugar
Salt and pepper, to taste
Directions:
In a large skillet over medium heat, cook bacon or pork belly slices until crisp. Remove and set aside. Leave a few tablespoons of the fat in the pan (add butter if needed).
In the same skillet, add sliced onions and apples. Sprinkle with sugar, a pinch of salt, and black pepper. Cook over medium-low heat for 10–15 minutes, stirring occasionally, until soft and caramelized.
Layer the apple-onion mixture on slices of rye bread or on a platter. Add the crisped bacon or pork on top.
While still warm, sprinkle with crumbled Daneko Danish Blue Cheese. Let it soften slightly over the warm apples and pork.
Serve warm and enjoy!
